Cocoyam/Yam Pottage (mpotompoto)



Cocoyam/Yam Pottage is a very delicious and nutritious Ghanaian meal. It is easy to prepare and can be eaten as lunch or even supper.


Ingredients

pieces of yam or cocoyam (number depends on number of people to eat)

pieces of tomatoes

pepper

palm oil

onions

smoked salmon, canned fish or any fish or meat of your choice

salted fish (momoni and/or kako)

seasoning cubes (optional)

Salt to taste


Procedure

  1. Peel and cut cocoyam or yam into smaller desired pieces.

  2. Wash and transfer into cooking saucepan.

  3. Chop some of the onions and put on the cocoyam/yam.

  4. Add some salt to taste.

  5. Wash tomatoes, pepper and onions and add to yam/cocoyam.

  6. Pour water on it and put on fire.

  7. 5 minutes after it boils, remove tomatoes, pepper and onions and blend them together.

  8. Pour it on the cocoyam/yam on fire.

  9. Wash fish and put into saucepan.

  10. Add spices of your choice.

  11. When cocoyam is well cooked, pour palm oil into it and let it boil for about 2 to 3 minutes.

  12. Take it off the fire and serve it hot.
