Spicy Fried Plantain (Kelewele)

INGREDIENTS

ripe Plantains

Onions

Ginger

red Pepper

Salt to taste

Hwentia (grains of selim)

Cloves (Pepre/Dadoa Amba/Mprego Amba)

Garlic (optional)

Anise seed (Nkitinkiti) (optional)

Cooking (Vegetable) oil


PROCEDURE

  • Peel plantain and cut into smaller cubes.

  • Wash spices and blend them.

  • Put plantain into a bowl and add blended spices.

  • Stir them gently with a wooden spoon so that the plantain gets coated with the spices.

  • Pour oil into a shallow pan and heat it.

  • When hot, fetch plantain into the oil.

  • Stir regularly to prevent sticking.

  • When the colour turns golden, remove from the oil and serve it hot.

  • You can serve it with groundnut or eat it alone.
